Pumpkin Oatmeal Cookies

Krusteaz Recipe
1 pouch quick bread Krusteaz Pumpkin mix
1/2 cup butter, softened
1 egg
1 cup quick oats
1/2 cup sugar
1 tsp cinnamon
1/4 tsp. nutmeg
3 Tbs water
1/2 cup chocolate chips

Preheat oven 375 degrees. Place quickbread mix and butter in medium bowl. Using an electric mixer, mix on medium speed for 1 minute. Add egg, oats, sugar, cinnamon, nutmeg and water. Continue to mix on medium speed until dough forms. Stir in chocolate chips. Used rounded tablespoon dough for each cookie, form balls. Place 2" apart onto ungreased baking sheet. Bake 11-13 minutes. Makes 2 dozen cookies.

Oatmeal Pumkin Chocolate Chip Cookies

1 cup butter
1 cup sugar
1 cup brown sugar
2 eggs
1 tsp vanilla
1 cup pumpkin puree
3 cups flour
2 tsp baking soda
1/2 tsp salt
1 heaping tsp cinnamon
1/4 tsp ground ginger
1/2 tsp nutmeg
1/8 tsp ground cloves
1/2 tsp pumpkin pie spice
2 cups oatmeal
2 cups chocolate chips


Preheat oven 350

Cream butter in mixer, add sugars and blend until light and fluffy.  Add eggs one at a time and then add vanilla and pumpkin. In a separate bowl combine flour, soda, salt, cinnamon, ginger, nutmeg, cloves, and pumpkin pie spice and whisk together. Add flour mixture a cup at a time to pumpkin mixture. Add oatmeal and mix until combined. Stir in chocolate chips. Scoop heaping Tbs. of cookie dough on sprayed cookie sheets and bake for 12-15 minutes or until edge is lightly browned. Cool on wire racks and enjoy!!
